Summary of Identified
Issues
The Food Science and Nutrition faculty met in Fresno, Oakland,
Los Angeles and at the Statewide Meeting. We appreciate the
support of CSU and Community College faculty. Almost every
CSU offering Nutrition as a major sent a representative to
these meetings. The major issues discussed were:
· Agreement with suggested changes to the course descriptors
to be sent to the CAN Numbering System. It was agreed to go
forward with recommendations from last year.
· Revision of the CSU Grid to include changes in courses
offering in Nutrition, Principles of Foods and Food Science.
Grid to be revised to include only lower division courses.
Participants ask that Introduction to the Professions and
Sanitation and Safety be added to the grid as they soon will
be added to CAN.
· The committee was delighted to learn that Cal Poly
Pomona is changing its first Nutrition class for Dietetics
majors to lower division without prerequisites and removing
Chemistry as a prerequisite to Principles of Foods. Long Beach
is considering removing Chemistry as a prerequisite to Principles
of Foods as well.
· Final agreement was achieved on the Transfer RD Program
and discussion was held on how to get this information into
the community college catalogs.
· Participants were upset about the proposed changes
in Minimum Qualifications for community college faculty and
delighted that these recommendations were withdrawn as faculty
did not support these changes.
· The origination of a distance education Dietetic
Technician Program in the Central Valley was discussed and
supported since there is currently no Dietetic Technician
Program in that area.
· Elizabeth Cipras, our Articulation Officer, discussed
cross enrollment between the community college and CSU and
suggested that it may be a way to encourage our students to
transfer to CSU for further education. She suggested that
we could also hold CSU courses on community college campuses
or that our students could take course on the CSU campus while
only paying minimal fees. Forms for cross enrollment were
distributed.
· Cynthia L. Gonzalez of Santa Monica College shared
with meeting attendees her research and proposal for a Nutrition
and Wellness Program.
Identified Trends/Future
Directions
Low enrollment continues to be a problem at many community
colleges and CSUs in Nutrition and Food Science. As the population
ages there will be more jobs for individuals trained in Nutrition.
The discipline faculty intend to discuss recruitment of students
into the profession perhaps developing a brochure advertising
the Transfer RD program. Finally, it was determined to open
discussion to related professions and suggest inviting faculty
associated with Hospitality programs to join our IMPAC discussions.
Comments from Statewide
Meetings and the General Field
The members applauded progress in improving articulation between
programs throughout the state and have felt that the IMPAC
meetings have been worthwhile in fostering articulation. Most
attendees plan on attending additional meetings next year.
Recommendations
for the Discipline
· Continue to support transfer programs in Food Science
and Nutrition to increase enrollment at the four-year and
community colleges throughout the state.
· Strengthen the lower division classes currently CANNed
to encourage students to become involved in the profession
early in their college career.
· Continue to encourage networking between colleges
throughout the state to strengthen ties between programs.
· Work with articulation officers to facilitate transfer
between community colleges and four-year schools.
· Transfer RD Program: The following courses are suggested
for a Transfer RD Program:
o Intro to the Professions
o Nutrition
o Principles of Foods
o Cultural & Ethnic foods or Cultural Anthropology
o Food Science Technology
o Sanitation and Safety
o In addition, these additional courses complement the RD
lower preparation:
· General
· Chemistry
· Organic Chemistry
· Physiology
· Microbiology
· Public Speaking
· English Composition
· Statistics
· Foreign Language
· American History and Constitution
· Political Science
· Psychology
· Intro to Computer including MS Office.

Discussion
The participating IMPAC faculty wish to work on the following
next year:
· Develop a Transfer Grid listing the courses in the
first column, the CAN numbers in the second and the four-year
colleges in that require that course in subsequent columns.
This will facilitate statewide consensus and simplify transfer.
· Increasing articulations between community colleges
and four-year colleges with assistance of articulation officers.
· Development of an Introduction to the Professions
course online.
· Development of a Transfer RD brochure to facilitate
student understanding of the transfer process.
· Promote Cross Enrollment between CSU and community
colleges.
· Develop a roster of Nutrition Faculty in California,
full time and part time.
· Develop an action plan for recruitment and transfers.
· Review course outlines to compare content.
· Invite book representatives to share books available
in Food Science and Nutrition.
· Invite Hospitality to join in the discussions.
Recommendations
Forwarded/to be forwarded to:
CAN - The recommendations forwarded to CAN last year were
accepted. Sanitation and Safety and Introduction to the Professions
were added to the CAN list. The descriptors in FCS 26 Food
Science Technologies and FCS 28 Cultural and Ethnic Foods
were modified. The committee wishes to support the simplification
of the CAN process to encourage more schools to adopt these
classes.

Outreach presentations
made by members of this group:
I discussed IMPAC with attendees at the California Community
Colleges, Family and Consumer Science Strategic Planning Retreat
held in San Francisco on May 7-9, 2002. Several of the 30
members in attendance were concerned about the other disciplines
in FCS. I suggested that Fashion and Interiors may be discussed
with Design/Art, Early Childhood and Life Management discussed
with Psychology and the general area of Family and Consumer
Science discussed with Teacher Education. They may contact
IMPAC with their desire to be involved. IMPAC will be including
Human Development next year and is seeking an individual from
Early Childhood to become involved.
Shared IMPAC with Consumer and Health Science Department
at Orange Coast College.
Shared newsletter and final report with Orange Coast College,
President, deans of Consumer and Health Science, Career Education
and Science Department.
